chicken adobo

chicken thighs (bone in)
1/8 cup water
3/4 cup soy sauce
3/4 cup white vinegar
1 clove crushed garlic
7 peppercorn balls
2 bay leaves
1/2 tbls. sugar

since i don't use recipes for my own dishes these are estimates rather than exact measurements. for the chicken i skin them and wash them before i cook them. i prefer skinless chicken for this dish because i don't like soggy chicken skin unless it's fried but i guess that means it's no longer soggy. anyhow just add the chicken to the pot of liquids and cook on med until the chicken is cooked all the way through. i serve it with steamed rice and pour some of the juices over the rice.
