throw back thursday - goin' down tonight

starting today on the third thursday of every month i'm going to hit you with a song from the past. i'm calling it throw back thursday's. i will only post songs that are at least 10 years or older. this is to remember some great jams from the past and where i'll reflect on past memories.i'm starting throw back thursdays with a song by celly cel called it's goin' down tonight. you may wonder why am i starting here.. well a few days ago one of my coworkers didn't beleive that i would listen to this type of music and he couldn't believe that i knew who E-40 was. please i grew up in the bay and i've been listening to this jam since it was released in '95. i have known what's up with valley-jo and the click from back in the day. for some of you this could be your first listen at this bay area classic that for me never gets old. there is also a remix with some heavy hitters like E-40, b-legit, mack 10 and rappin'4tay so check it out.

gmas fried rice

this batch of fried rice tasted exactly like my grandmas friend rice. i'm not exactly sure how that happened but i sure am happy that it did!! if you know my grandma then you would know that she was not the cook in her house. my grandpa spoiled her and did most of the cooking so she didn't have to. however there are at least 5 things i can think of that she cooked very well and her fried rice was one of them. my grandma always threw in whatever left over meat they had or spam but for this i used leftover ham from easter, a splash of extra virgin olive oil, 1/2 of a yellow onion, 5 eggs, steamed rice and soy sauce. it's easy to sometimes get carried away with all that can be added to fried rice and that's ok, just remember that sometimes grandma knows best. this song came to mind while writing this. my grandmas used to sing it to us and by us i mean she mostly sang it to my little brother. i love you, a bushel and a peck, a bushel and a peck, and a hug around the neck!

ham leftovers

after easter there was still lots of ham to be eaten. here are a few things i decided to make with it. breakfast burritos on corn tortillas and a toasted bagel both served with eggs, green onions and cheese. on the burritos i added salsa verde and sour cream but i guess i took this picture before i had that idea. these turned out good but with nearly every bite i wished i had cilantro for an extra kick. as for my bagel sandwich i dipped it in ketchup, sorry to those of you who think that's gross but i love eggs with ketchup!!

pineapple delight

tonight i ate not 1 but 2 yummy homemade teriyaki burgers made by a friend. they were made with love and topped with grilled pineapple and pineapple makes me smile!! thanks for the invite and a tasty pineapple dessert too.

taco soup

tonight alexis had me over for dinner and we made taco soup. it was super easy and i really enjoyed it! we ate the soup with tortilla chips and topped it with sour cream and avocados. i'll be making this again now that i see how it's done, thanks for the recipe.

ingredients:
1 lb. ground turkey or beef
1 large chopped onion
1 pkg. of hidden valley ranch dressing mix
1 pkg. of taco seasoning
1 can pinto beans
1 can ranch style chili beans
1 can corn
2 cans diced tomatoes
directions:
1. brown meat and onions, drain grease
2. add the ranch & taco seasoning to meat (directly from package)
3. add beans, corn and tomatoes
4. simmer for 1 hour

easter dinner 2010

this year for easter a friend and i decided that we'd cook our own dinner. we made a ham shank, cheesy potatoes and homemade rolls. this turned out to be a great idea all except the fact that i forgot to bring the asparagus. not that the meal needed more but we could've used a veggie on the plate for color. thank you to the griffins for the free ham!!
